Who hasn’t heard of a Clif Bar?  God they’re good—soft and chewy—a great way to boost energy, eat healthy, and have a great snack.  I love them! But…they are soooooo expensive!  

I want to give you a homemade energy bar recipe that works well and is Yumalicious!  It’s not exactly like a Cliff Bar, but it’s darn close!

My recipe incorporates the primary ingredients used in a Cliff bar but replaces brown rice syrup (which you can use if you want) with honey—because that is an ingredient most people have in their pantries…  I also cannot eat soy products, so I am leaving out the soy and replacing that with almond meal…. 



Homemade Clif Bars

1 cup crisp rice cereal
1 cup uncooked quick-cooking oats

1 TBS ground flaxseed—flaxseed meal
¼  cup almond meal flour (optional)
½  chopped dried fruit—I used cherries (raisins, cranberries, prunes, whatever…)

¼ cup chopped nuts—I used pecans (walnuts, almonds, you get the idea)
½  cup honey  (brown rice syrup, maple syrup, or light molasses)

4 TBS dark brown sugar

½  cup almond butter (or peanut butter, cashew butter, etc.)

1 and ½ teaspoon vanilla extract

 ½ teaspoon ground cinnamon


Combine the rice cereal, oats, flaxseed meal, almond meal, dried fruit, cinnamon, and nuts in a large bowl.


In a small saucepan over medium heat, bring the honey and brown sugar to a boil, stirring constantly. Remove from heat and stir in nut butter and vanilla until blended.


Pour nut butter mixture over cereal mixture and stir…Mixture will be stiff.   Press mixture firmly into a lightly greased  8-inch square pan.  You can use a spatula or a large square of wax paper—or your hands if it’s not too hot. Cool and cut into bars.
  




You can experiment like crazy with these! Have fun making these no-bake energy bars...

I love Cliff bars too! Especially the chocolate ones when they are warmed up a bit in the micro!

Those sound tasty. I actually make granola pretty similar to those. I use Fiber One cereal, oats and Rice Krispies. I don't use fruit but I do use peanut putter. Mine are just peanut butter granola. They don't last but just a couple days in my house. LOL!

I may have to try your recipe, I am always looking for new recipes to try.

Oh, yum! I made these the first time per the recipe and it was a little too sweet for me. But I substituted agave for honey so that may be why. Now I tone down the sugar, add more nuts, dried coconut and use protein powder instead of almond meal. Perfect energy bar. And VERY addictive. I probably 'sample' a bar's worth while I'm making this. Thanks!
