Oh this is delightful--really! And before you say "Oh NO you DiDn't," (hee hee Davida --Glue for Families!) check out this... A measly 95 calories per serving and only 4 grams of fat--a lovely treat without the guilt. Not only are they yummy, they are so easy to make.
Here's what you need...
1/3 cup butter--room temperature
2/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1 and 1/2 teaspoon vanilla
2 cups flour
5 teaspoons lemon zest
1 cup pistachio nuts
and Lemon Icing
Here are the simple directions...
1. Lightly grease cookie sheet(s); set aside. In a mixing bowl, beat butter for 30 seconds. Add sugar, baking powder, and salt. Beat until combined, scraping sides of bowl as needed. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour and lemon peel. Stir in the pistachio nuts.
2. Divide dough into thirds. Shape into 7-8 inch rolls. Place about 3 inches apart on prepared baking sheets. Flatten slightly until about 3 inches wide and 1 to 1 and 1/2 inches tall.
3. Bake in the oven at 375 degrees for 20 to 25 minutes--the tops will be golden brown and slightly cracked. Cool on cookie sheet for 30 minutes.
4. Use a serrated knife to cut each roll diagonally into 1/2 inch slices. Place slices on ungreased cookie sheets. Bake in a 325 degree oven for 8-12 minutes--longer and at a lower temp if you like your biscotti extra hard. I like mine a little softer, so I only re-bake for about 8 minutes. Transfer to a wire rack and cool.
Lemon Icing
Mix 1 cup powdered sugar, 1 to 2 teaspoons fresh lemon juice, 1 to 2 tablespoons milk or water. (You can also use a tablespoon of light corn syrup for a shiny hard icing).
